Instructions

1-Step 1: Preparing the Shells: Get your baking sheets ready and sift the dry ingredients like almond flour and powdered sugar. Heat the egg whites, sugar, and optional egg white powder over simmering water until they turn frothy and the sugar dissolves fully. Move this mixture to a stand mixer and whip it until you see stiff peaks forming, then gently fold in the sifted dry ingredients along with the espresso powder.

2-Step 1: Preparing the Shells: Test the batter by seeing if it flows in a figure 8 pattern or drops slowly from a spoon. Pipe out 2.5-inch circles on your sheets, tap to remove air bubbles, and let them dry for 20-40 minutes until a skin forms.
