๐Ÿš Experience the comforting warmth of traditional Filipino comfort food that’s perfect for cold days or when you’re feeling under the weather
๐Ÿฅ˜ Create a creamy, aromatic rice porridge that combines tender chicken with fragrant spices for a nourishing meal that brings the family together

  • Total Time: 50-70 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

3/4 cup jasmine rice provides a light base for the porridge

3/4 cup sweet (glutinous) rice adds the creamy texture essential for Arroz Caldo

34 ounces water or enough to reach the desired thickness of the porridge

1 whole chicken, cut into serving pieces, or boneless skinless chicken delivers rich flavor and protein

8 cloves chopped garlic enhances the aromatic base when sautรฉed

3 chopped onions (yellow or white) builds a flavorful foundation for the dish

3 thumbs worth of julienned ginger adds warmth and aids digestion

1 tablespoon safflower stirred in to enhance color and aroma

1 teaspoon turmeric powder adds a vibrant hue and subtle earthiness toward the end of cooking

Fish sauce to taste provides seasoning and umami depth

Ground black pepper to taste offers a peppery kick for balance

8 hard-boiled eggs used as toppings for added protein

1 cup chopped green onions garnishes the dish for freshness

Additional garlic cloves (quantity as needed) fried until golden brown for a crunchy topping

Instructions

1-First, rinse the rice thoroughly under cold water until the water runs clear to remove excess starch. In a large pot, sautรฉ the chopped garlic, onions, and julienned ginger in a little oil until fragrant, about 2-3 minutes; this step infuses the dish with essential flavors. Add the chicken pieces and cook until lightly browned, which helps seal in the juices and enhances the overall taste.

2-Pour in the 34 ounces of water and bring it to a boil, then reduce the heat to low. Stir in the rinsed jasmine and sweet rice, along with fish sauce and ground black pepper to taste. Cover the pot and let it simmer for 35 to 50 minutes, stirring occasionally to prevent sticking and ensure the rice breaks down into a thick consistency.

3-Toward the end of cooking, add the safflower and turmeric powder to boost color and aroma. For adaptations, substitute ingredients as needed for dietary preferences. Once done, the total preparation and simmering time is roughly 50 to 70 minutes, resulting in a dish that’s ready to serve hot.

Notes

๐ŸŒพ For extra creaminess, soak the rice in water for 30 minutes before cooking to help it break down faster
๐Ÿฅš Hard-boiled eggs can be added during the last 10 minutes of cooking for a more integrated flavor
๐Ÿ‹ Squeeze fresh calamansi or lemon juice just before eating to brighten the flavors and cut through the richness
