Ingredients

– 3/4 cup all-purpose flour

– 3/4 cup white whole wheat flour

– 1/2 cup brown sugar

– 2 teaspoons baking powder

– 1 teaspoon cinnamon

– 1/2 teaspoon nutmeg

– 1/4 teaspoon allspice

– 1/4 teaspoon salt

– 6 tablespoons cold butter, cut into pieces

– 1/2 cup milk

– 1 egg

– 1 teaspoon vanilla extract

– 1 cup chopped tart apple

– 1 cup confectioner’s sugar for the glaze

– 2 tablespoons milk for the glaze

– 1 teaspoon vanilla extract for the glaze

Instructions

1-Preheat oven: Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with a silicone baking mat or use the pan directly.

2-Mix dry ingredients: In a large bowl, whisk together the 3/4 cup all-purpose flour, 3/4 cup white whole wheat flour, 1/2 cup brown sugar, 2 teaspoons baking powder, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon allspice, and 1/4 teaspoon salt. Cut in the 6 tablespoons of cold butter until the mixture resembles coarse crumbs.

3-Mix wet ingredients: In a smaller bowl, whisk together the 1/2 cup milk, 1 egg, and 1 teaspoon vanilla extract. Add this mixture to the flour mixture and stir until just combined.

4-Fold in apple: Gently fold in the 1 cup chopped tart apple. If the batter is too thin due to juicy apples, add 2-4 tablespoons more flour to help it hold its shape.

5-Drop batter: Drop the batter by 1/4 cup onto the baking sheet for large fritters or by heaping tablespoon for mini fritters. Do not flatten the batter.

6-Bake: Bake for 11-13 minutes for large fritters or start checking at 8 minutes for mini fritters until the bottoms are golden and the centers are set.

7-Remove from oven: Remove the fritters from the baking sheet to a wire rack and set the oven to broil.

8-Prepare glaze: Prepare the glaze by whisking together the 1 cup confectioner’s sugar, 2 tablespoons milk, and 1 teaspoon vanilla extract until smooth.

9-Glaze and broil: Brush the fritters with a thin layer of glaze, then place them under the broiler for 2-4 minutes until the tops are golden and the glaze bubbles.

10-Finish glaze: Remove from the oven and brush the remaining glaze on the warm fritters.

11-Let glaze harden: Let the glaze harden before serving. The fritters are best enjoyed the same day.
