Ingredients
1 and 1/2 cups (345g) mashed bananas (about 4 medium or 3 large ripe bananas)
3 cups (375g) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup (12 tablespoons; 170g) unsalted butter, softened
1 cup (200g) granulated sugar
1/2 cup (100g) packed light or dark brown sugar
3 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 and 1/2 cups (360ml) buttermilk, at room temperature
8 ounces (226g) full-fat brick cream cheese, softened to room temperature
1/2 cup (8 tablespoons; 113g) unsalted butter, softened
3 cups (360g) confectionersβ sugar, plus an extra 1/4 cup (approximately 30g) if needed
1 teaspoon pure vanilla extract
1/8 teaspoon salt
Instructions
1-Preheat your oven to 350Β°F (175Β°C). Grease and flour a 9Γ5 inch loaf pan to ensure easy removal. For dietary preferences, consider lining the pan with parchment paper.
2-In a large bowl, mash the ripe bananas thoroughly until smooth. For a vegan or low-calorie option, use ripe bananas to increase natural sweetness.
3-Cream the softened butter with sugar until light and fluffy using a hand mixer. For vegan versions, use your chosen plant-based butter substitute.
4-Beat in the eggs one at a time, followed by the vanilla extract, ensuring the mixture is well combined. For vegan recipes, use flax eggs instead of regular eggs.
5-In a separate bowl, whisk together the flour and baking soda. Gradually add this dry mixture to the wet ingredients, mixing gently to avoid overworking the batter.
6-Pour the batter into the prepared loaf pan and smooth the surface with a spatula. For gluten-free variations, ensure the batter is evenly distributed.
7-Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Adjust cooking time slightly for gluten-free or vegan recipes if needed.
8-Allow the banana cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Serve as is or with a light frosting if desired, adapting toppings for specific dietary needs.
