Ingredients

– 12 to 16 ounces thick-cut bacon with reserved bacon grease after cooking

– 2 pounds ground beef (80/20 fat ratio preferred)

– โ…” cup quick cooking oats

– ยฝ cup milk

– 1 lightly beaten egg

– 1 tablespoon Worcestershire sauce

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– ยฝ teaspoon kosher salt

– ยฝ cup sweet and spicy barbecue sauce with extra sauce for serving

Instructions

1-Preheat the oven to 400ยฐF and line a baking sheet with foil. Spread the bacon evenly and cook for 18 to 22 minutes until crispy, then drain and chop into small pieces, reserving 1 tablespoon of bacon grease.

2-Lower the oven temperature to 350ยฐF. In a large bowl, combine the ground beef, chopped bacon, quick cooking oats, milk, lightly beaten egg, Worcestershire sauce, garlic powder, onion powder, and kosher salt. Mix gently to blend without overworking the meat.

3-Shape the mixture into a loaf on the foil-lined baking sheet. In a small bowl, mix the barbecue sauce with the reserved bacon grease, then brush it over the top of the meatloaf for a flavorful glaze.

4-Bake the meatloaf for 65 to 70 minutes, or until the internal temperature reaches 165ยฐF. For the best results, use a digital meat thermometer to check doneness accurately.

5-Allow the meatloaf to rest for at least 5 minutes before slicing to let the juices settle. Serve with additional barbecue sauce if you want an extra kick of flavor.
