๐Ÿซ These Blueberry Cheesecake Protein Balls deliver a healthy, delicious snack option packed with protein and antioxidants.
๐Ÿฐ Perfect for on-the-go energy, they combine creamy cheesecake flavor with the natural sweetness of blueberries in a convenient bite-sized treat.

  • Total Time: 25 minutes
  • Yield: 12-15 balls

Ingredients

– 1/2 cup protein powder (unflavored or vanilla recommended, about 54 grams)

– 1/2 cup coconut flour

– 3 tablespoons granulated sugar or sweetener of choice (such as monk fruit sweetener or stevia for low carb)

– 4 tablespoons cream cheese (dairy or dairy-free such as almond milk-based cream cheese)

– 1/4 cup blueberry puree (made from fresh or frozen blueberries, pureed or mashed with an optional splash of lemon juice to brighten color)

Instructions

1-Mash or puree the blueberries in a small blender; adding lemon juice helps maintain a vibrant color and enhances the flavor.

2-In a bowl, mix the protein powder, coconut flour, cream cheese, and blueberry puree. Knead and press with your hands to combine into a dough.

3-Adjust the dough consistency as needed: add more coconut flour if it is too soft, or add water, almond milk, or additional puree if it is too thick.

4-Taste the dough and add sugar or sweetener if desired for the perfect level of sweetness.

5-Roll the dough into tablespoon-sized balls.

6-Refrigerate for about 15 minutes to set, then enjoy your Blueberry Cheesecake Protein Bites.

Notes

๐Ÿ‹ Adding lemon juice to blueberry puree enhances color and flavor.
๐Ÿฅฅ If dough is sticky, add more coconut flour; if too thick, add more liquid.
๐Ÿ“ Use frozen blueberries freely and consider substituting almond flour for coconut flour for a different texture.
