Ingredients

– 1 1/2 to 2 pounds small new potatoes, washed and scrubbed, cut in halves or quarters if larger

– 1 tablespoon fine sea salt to salt the boiling water

– 2 tablespoons unsalted butter, melted

– 2 tablespoons extra virgin olive oil

– 1 teaspoon kosher salt or to taste

– 1/2 teaspoon freshly ground black pepper or to taste

– 2 tablespoons finely chopped parsley, optional garnish

Instructions

1-First, wash and scrub the potatoes, then cut any larger ones into even-sized pieces for uniform cooking.

2-Place the potatoes in a pot and cover them with water by about 1 inch, adding the 1 tablespoon of fine sea salt to the water.

3-Bring the water to a boil with the lid on, then reduce the heat to a simmer and cook uncovered until the potatoes are fork-tender, about 10 to 18 minutes depending on size.

4-Once cooked, drain the potatoes and return them to the pot or a mixing bowl.

5-Drizzle the 2 tablespoons of melted unsalted butter and the 2 tablespoons of extra virgin olive oil over the potatoes.

6-Season with the 1 teaspoon of kosher salt and 1/2 teaspoon of freshly ground black pepper to taste, then garnish with the 2 tablespoons of finely chopped parsley if desired, and toss gently to combine.
