Ingredients
– 1 cup finely cubed tomatoes
– 1 clove garlic, minced
– 1 shallot, minced
– 3 leaves fresh basil, finely chopped
– 2 tablespoons olive oil, divided
– Β½ teaspoon salt, or to taste
– Β½ teaspoon pepper, or to taste
– 2 large boneless, skinless chicken breasts, cut in half lengthwise
– 4 slices mozzarella cheese
– ΒΌ cup balsamic glaze
Instructions
1-In a medium bowl, combine 1 cup tomatoes, minced garlic and shallot, chopped basil, half of the salt and pepper, and 1 tablespoon olive oil. Mix well and set aside.
2-Season the chicken breasts with the remaining salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook chicken for 3 to 4 minutes on each side until browned.
3-Place a slice of mozzarella cheese on each chicken breast. Cover the skillet with a lid and allow the cheese to melt. Remove from heat.
4-Spoon the prepared tomato mixture (bruschetta) over each chicken breast and drizzle with ΒΌ cup balsamic glaze.
5-Serve and enjoy.
