Instructions
1-Start by heating 1 tablespoon of olive oil in a large pot over medium heat.
2-Add 1 medium diced onion and sautรฉ for about 2 minutes until it softens, then toss in 450 grams of lean ground beef.
3-Cook the beef with the onion until it’s browned and fully cooked, which takes around 5-7 minutes; drain any excess fat if needed.
4-Stir in 2 cloves of minced garlic and 1 tablespoon of taco seasoning, letting them mix for about a minute to release their aromas.
5-Next, add 1 diced red bell pepper, 240 ml beef broth, 240 ml water, 400 grams diced tomatoes, and 225 grams tomato sauce; bring everything to a simmer.
6-Pour in 225 grams of medium shell pasta, stir well, and let it cook for 10-12 minutes until the pasta is tender.
7-Once done, remove from heat and mix in 120 grams cottage cheese, 120 grams shredded cheese blend, 115 grams shredded mozzarella, and 240 grams drained black beans until everything melts together nicely.
8-Serve it warm for the best taste, and enjoy that creamy, cheesy goodness with your family.
