Ingredients
2 pounds (about 900 grams) ground beef (80% lean, 20% fat) This forms the base for a juicy and flavorful meatball.
1 pint (approximately 473 ml) mushrooms pureed until smooth Adds hidden moisture and nutrition without a strong taste.
1 sleeve buttery crackers crushed Helps bind the mixture and gives a subtle crunch.
2 tablespoons yellow mustard Brings a tangy kick to balance the richness.
2 tablespoons ketchup Adds sweetness and depth for that classic meatloaf vibe.
1 tablespoon Worcestershire sauce Boosts the umami flavor in every bite.
1 teaspoon black pepper Provides a simple, spicy note.
1 teaspoon onion powder Infuses a savory onion essence without chopping.
1 teaspoon garlic powder Delivers a punch of garlic aroma effortlessly.
1 large egg Acts as a binder to hold everything together.
6 ounces (170 grams) sharp cheddar cheese cubed Creates the gooey, cheesy surprise in the center.
Instructions
1-First, puree the mushrooms until they’re finely smooth, then crush the sleeve of buttery crackers and set them aside. Cube the sharp cheddar cheese into small quarters for stuffing.
2-In a large bowl, mix the pureed mushrooms, ground beef, crushed cracker crumbs, yellow mustard, ketchup, Worcestershire sauce, black pepper, onion powder, garlic powder, and egg. Use your hands to combine everything thoroughly but gently.
3-Divide the mixture into 12 large portions and shape each into a ball. Create a small depression in the center of each one.
4-Place 1 to 3 cheese cubes into each depression, then cover the cheese completely with the meat mixture, making sure there are no gaps.
5-Arrange the meatballs on the prepared baking sheet and bake for 30 minutes, or until they’re cooked through and the cheese is melted inside.
6-Once done, let them cool slightly and serve warm, perhaps with homemade banana bread as a comforting side for a complete meal.
