  • Total Time: 1 hour 15 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

2 tablespoons unsalted butter

2Β½ cups (12 oz) cherries

3 large eggs

1 cup whole or 2% milk

ΒΌ cup heavy cream

Β½ cup plus 2 tablespoons granulated sugar

Β½ cup all-purpose flour

ΒΌ teaspoon salt

1 teaspoon vanilla extract

β…› teaspoon almond extract

confectioners’ sugar for dusting

Instructions

1-Start by preheating your oven to 375Β°F to get everything ready for baking. This step sets the stage for a dessert that will impress with its golden finish and tender texture.

2-First, melt the 2 tablespoons of unsalted butter in a 10-inch ovenproof skillet or baking dish, then arrange the 2Β½ cups of stemmed and pitted cherries evenly across the base. In a blender, mix the 3 large eggs, 1 cup of whole or 2% milk, ΒΌ cup heavy cream, Β½ cup granulated sugar, Β½ cup all-purpose flour, ΒΌ teaspoon salt, 1 teaspoon vanilla extract, and β…› teaspoon almond extract until smooth and well combined.

3-Pour this batter over the cherries in the dish for even coverage. Bake for 20 minutes, then remove from the oven and sprinkle the remaining 2 tablespoons of granulated sugar on top. Return to the oven and bake for an additional 25 to 30 minutes, until it’s golden brown, just set with a slight jiggle, and a toothpick comes out clean. Let it cool for 30 minutes before serving, and dust with confectioners’ sugar if you like.
