3 sliced bell peppers

1 medium sliced onion

1 tablespoon olive oil for marinade

1/2 teaspoon black pepper for marinade

1 tablespoon olive oil for cooking chicken

1 tablespoon olive oil for sautéing onions and peppers

1/4 teaspoon salt for seasoning vegetables

Additional lime juice for serving

Instructions

1-Prepare all ingredients: Slice 3 boneless, skinless chicken breasts into thin strips, then wash and slice 3 bell peppers and 1 medium onion. Gather the seasoning mix including 1 tablespoon olive oil, juice of half a lime, 1 teaspoon chili powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon onion powder, 1/2 teaspoon black pepper, 1/2 teaspoon cumin (if using), and 1/2 teaspoon salt.

2-Marinate the chicken: Coat the chicken strips with the seasoning mix and let them sit for at least 10 minutes to absorb the flavors.

3-Cook the chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the marinated chicken in batches and cook for 5-7 minutes until fully cooked and slightly charred.

4-Sauté the vegetables: In the same skillet, add another 1 tablespoon olive oil and sauté the sliced onion for 2 minutes. Then, add the sliced bell peppers and the remaining 1/4 teaspoon salt, cooking for another 2 minutes until tender but crisp.

5-Combine and finish: Mix the cooked chicken back into the skillet with the vegetables and stir well. Squeeze on additional lime juice before serving to brighten the flavors.

6-Serve it up: Dish out the fajitas hot, typically with tortillas and your favorite toppings. For a fresh twist, add items like avocado or cilantro.
