Ingredients

– 1 lb ground chicken (or substitute with ground turkey)

– 1/4 cup grated parmesan cheese

– 2/3 cup panko breadcrumbs

– 1/2 tsp salt

– 4 cloves garlic, minced for the meatballs

– 1 tbsp lemon zest

– 2 tbsp oil for cooking the meatballs

– 1/2 stick butter for the sauce

– 1 tbsp flour

– 1 cup chicken broth (low sodium can be used)

– 1/4 cup capers plus 2 tbsp caper brine

– 1/4 cup lemon juice

– 1 lb ground chicken

– 2/3 cup panko breadcrumbs

– 1/4 cup lemon juice

Instructions

1-First, in a large bowl, combine 1 lb ground chicken, 1/4 cup grated parmesan cheese, 2/3 cup panko breadcrumbs, 1/2 tsp salt, 4 cloves minced garlic, and 1 tbsp lemon zest. Mix gently to keep the texture light.

2-Next, form the mixture into meatballs using about 2 tbsp per ball, which should give you around 20 pieces.

3-Heat 2 tbsp oil in a large sautΓ© pan over medium-high heat and cook the meatballs, turning them frequently for even cooking, for about 6 minutes. Then, remove them from the pan.

4-In the same pan, melt 1/2 stick butter and sautΓ© 3 cloves minced garlic until fragrant.

5-Whisk in 1 tbsp flour, then slowly add 1 cup chicken broth, 1/4 cup capers with 2 tbsp caper brine, and 1/4 cup lemon juice. Let the sauce simmer for 6-7 minutes until it thickens.

6-Finally, return the meatballs to the pan and cook for another 5-6 minutes to coat them with the sauce.
