Instructions
1-Preheat oven to 325ยฐF (163ยฐC).
2-Prepare the pie crust in a pie dish and chill in the refrigerator while making the filling.
3-Mix flax meal with water to create flax eggs; set aside.
4-In a mixer or large bowl, cream together softened vegan butter, white sugar, brown sugar, salt, and vanilla extract.
5-Add the flax eggs and mix well.
6-Mix in the flour until just combined.
7-Stir in the vegan chocolate chips and optional nuts.
8-Pour the thick dough filling into the chilled pie crust and spread evenly with a spatula.
9-Bake for 45 to 60 minutes, until the top is golden and crackled. A knife inserted near the edge should come out clean.
10-Let the pie cool completely for at least 2 hours to set before serving. Can be warmed before serving.
