πŸ’ Discover the perfect blend of rich chocolate and juicy cherries in these decadent Chocolate Covered Cherries.
🍫 Ideal as a gourmet gift or a sweet treat, their luscious ganache and fruit filling offer a delightful contrast of flavors and textures.

  • Total Time: 30 minutes
  • Yield: 25 cherries 1x

Ingredients

Scale

1 jar maraschino cherries with stems (16 ounces or about 25 cherries, with juice reserved)

4 cups powdered sugar, divided

4 tablespoons salted butter, softened

16 ounces semi-sweet chocolate or a mix of semi-sweet and dark chocolate

red candy melting wafers for drizzling

Instructions

1-Drain the cherries, reserving at least ΒΌ cup of the juice. Place cherries on a paper towel to absorb extra juice and dab dry.

2-In a large bowl, mix 3 cups powdered sugar, butter, and ΒΌ cup cherry juice with a hand mixer until combined. Add remaining powdered sugar in ΒΌ cup increments until a soft dough forms. Refrigerate the mixture for 20 minutes.

3-Dust hands with powdered sugar to prevent sticking. Roll mixture into 1 Β½-inch balls and flatten between palms, then place a dried cherry in the center. Wrap the dough around the cherry and roll into a smooth ball. Refrigerate for 20 minutes.

4-Melt chocolate in a microwave-safe bowl in 30-second intervals, stirring between each session. Dip cherries by holding the stem, allow excess chocolate to drip off, and place on parchment-lined baking sheet.

5-Optional: melt red candy wafers and drizzle over cherries to hide imperfections.

6-Let chocolate set completely before storing. This method highlights the rich ganache coating around the juicy fruit filling.

Notes

πŸ’ Use cherries with stems for easier dipping; forks work for stemless cherries.
🍫 Choose high-quality chocolate and melt slowly to avoid burning; add shortening or coconut oil if chocolate is too thick.
❄️ Store in airtight container at room temperature for up to 8 weeks; avoid freezing to prevent cracking.
🍴 Allow cherries to rest 3-6 days for liquid centers if desired.
🧈 Use salted butter to balance sweetness or add a pinch of salt if using unsalted butter.
