3-Cover the mixture with plastic wrap directly touching the chocolate to prevent condensation, then chill in the refrigerator for 2 hours until set.
4-Scoop 1 tablespoon portions of the mixture and roll into balls; if sticky, freeze for a few minutes and wet hands with cold water before continuing.
5-Decorate truffles with holiday sprinkles or dip in melted chocolate and add icing or additional toppings as desired.
6-Allow decorated truffles to set on a tray for a few minutes, then refrigerate for another 20-30 minutes if coated.
7-Serve truffles at room temperature for the best flavor and texture.
