Ingredients

– 3 large eggs

– 3/4 cup lite coconut milk

– 1/2 teaspoon coconut extract

– 1/4 teaspoon vanilla extract

– 1/8 teaspoon salt

– 1 cup shredded sweetened coconut

– 6 slices of French bread cut into 1/2 inch slices

– Butter, as desired

– Maple syrup, as desired

– Strawberries, if desired

Instructions

1-Gather all ingredients and whisk the 3 large eggs with 3/4 cup lite coconut milk, 1/2 teaspoon coconut extract, 1/4 teaspoon vanilla extract, and 1/8 teaspoon salt in a shallow bowl until well combined.

2-Dip each of the 6 slices of French bread, cut into 1/2 inch slices, into the egg mixture, making sure both sides are coated evenly but not overly soaked to keep the texture just right.

3-Press each dipped slice into 1 cup shredded sweetened coconut, coating both sides thoroughly to create that crispy golden layer.

4-Heat a non-stick skillet over medium heat and add a bit of butter or oil. Cook the slices for 3-4 minutes per side until they turn a beautiful golden brown and the coconut crisps up.

5-Serve right away with maple syrup, butter, and strawberries if you like, for a fresh and delightful finish.
