Ingredients

– 1 cup unsalted butter, melted until browned

– 1 and 1/2 cups light brown sugar, packed

– 1/2 cup granulated sugar

– 2 large eggs, at room temperature

– 1 large egg yolk, at room temperature

– 2 and 1/2 teaspoons pure vanilla extract

– 2 and 1/3 cups all-purpose flour

– 1 teaspoon baking soda

– 1 teaspoon ground cinnamon

– 1/2 teaspoon salt

– 1 and 3/4 cups old-fashioned oats

– 3/4 cup sweetened flaked coconut

– 1/2 cup pecans, roughly chopped (with an optional substitution of walnuts)

– 12 ounces semi-sweet chocolate chips

– 1 teaspoon flaky sea salt (optional, for finishing)

Instructions

1-Scoop 2-inch balls of dough onto the prepared sheets, leaving 2 inches between each for spreading.

2-Bake one sheet at a time for 11-12 minutes, or until the edges are golden and the centers are slightly soft.

3-Optionally, press extra chocolate chips and pecans on top after baking and sprinkle with flaky sea salt.

4-Cool the cookies on the baking sheet for 10 minutes before transferring to a wire rack.
