  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

– 1/2 pound (about 227 grams) ground beef

– Salt and pepper to taste

– Pinch of red pepper flakes (optional)

– 3/4 cup (180 ml) pale ale beer or substitute such as chicken broth, beef broth, root beer, or cola

– 1/2 cup (about 56 grams) shredded pepper jack cheese

– 16 ounces (about 454 grams) processed cheese product, cubed

– 1 can (14.5 ounces or 411 grams) diced tomatoes with green chilies, partially drained

– 1 cup (about 170 grams) black beans, drained and rinsed

– 1/4 cup (about 40 grams) finely diced red onion

– 1/4 cup (about 15 grams) chopped fresh cilantro

Instructions

1-Cook and crumble the ground beef over medium-high heat in a large skillet, then drain the excess grease to keep the dip from being too oily.

2-Add red pepper flakes, salt, pepper, and beer, then simmer for 4-5 minutes until the beer reduces and flavors blend together.

3-Lower the heat to medium-low and stir in the cubed processed cheese and shredded pepper jack cheese until everything melts into a smooth mixture.

4-Mix in the black beans, red onion, and cilantro to add texture and freshness to the dip.

5-Stir in the diced tomatoes with some of the juice to reach your desired consistency, then heat for an additional 5 minutes before serving.
