Ingredients

– 16 ounces full-fat brick-style cream cheese, softened to room temperature

– 1 and 3/4 cups shredded sharp white cheddar cheese

– 2 tablespoons chopped fresh chives, divided

– 2 teaspoons chopped fresh parsley

– 1 teaspoon light or dark brown sugar

– 1 teaspoon garlic powder

– 1/4 teaspoon salt

– 1/4 teaspoon freshly ground black pepper

– 3/4 cup finely chopped dried cranberries, divided

– 3/4 cup finely chopped pecans, divided

Instructions

1-First, soften the cream cheese by leaving it at room temperature for about 15-20 minutes for easy mixing.

2-Second, in a mixing bowl, combine the softened cream cheese, shredded sharp white cheddar cheese, 1 tablespoon of the chopped fresh chives, chopped fresh parsley, brown sugar, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are evenly distributed.

3-Third, add the finely chopped dried cranberries and chopped pecans to the mixture, reserving some for rolling if you want extra crunch on the outside.

4-Fourth, using your hands or a spatula, shape the mixture into a tight ball. If desired, roll the formed cheese ball in the reserved chopped pecans and cranberries to coat the exterior thoroughly.

5-Fifth, wrap the cheese ball in plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the texture to firm up.

6-Final step: Unwrap, transfer to a serving plate, garnish with the remaining chopped fresh chives and additional cranberries or pecan halves if desired, and serve chilled with crackers, veggies, or bread slices.
