1 cup purple onion, diced

1 cup chopped tricolor peppers

2 cloves garlic, minced

2 cups chicken broth

1/2 cup milk

1/2 cup heavy cream

8 oz bow tie pasta or any other pasta (including gluten-free options)

Salt to taste

Pepper to taste

1/4 to 1/2 cup parmesan cheese

2 tablespoons fresh parsley, chopped

Instructions

1-Heat the olive oil and butter in a large pan or skillet over medium heat.

2-Add the chicken and cook until it is no longer pink.

3-Next, add the onions and peppers, and continue cooking until the chicken is fully cooked and browned.

4-Stir in the garlic, salt, and pepper, and cook for an additional minute.

5-Add the uncooked pasta, milk, cream, and chicken broth. Stir the mixture and bring it to a boil.

6-Reduce the heat to low, cover, and simmer for 20 minutes.

7-Finally, stir in the parmesan cheese. If the mixture is too thick, add more milk as needed to achieve the desired consistency.
