– 360 g (ΒΎ lbs) thin-cut sirloin steaks, cut into thin strips
– 1 small egg
– 4 tbsp cornflour (cornstarch)

– 4 Β½ tbsp sunflower oil, divided
– 1 medium onion, peeled and sliced into thin strips
– 1 red chilli, finely sliced (discard seeds for less heat)
– 1 tsp minced ginger
– 3 garlic cloves, peeled and minced
– 2 tbsp rice vinegar
– 3 tbsp dark soy sauce
– 2 tbsp tomato puree (or tomato paste)
– 6 tbsp caster sugar or superfine sugar
– 2 tbsp tomato ketchup
– 2 tbsp sweet chilli sauce
Instructions
1-Start: Start by getting all your ingredients ready this only takes about 10 minutes of prep. The whole process comes together in 20 minutes of cooking, giving you a hot meal fast.
2-Prepare the beef: First off, grab a bowl and toss in those thinly sliced sirloin steaks with 1 small egg to coat them evenly. This step helps the seasoning stick and sets up that amazing crispy layer. Next, mix in 4 tbsp cornflour, ΒΌ tsp salt, ΒΌ tsp black pepper, and β tsp white pepper until everythingβs sticky and well-covered.
3-Fry the beef: Heat 3 tbsp of sunflower oil in a pan over high heat itβs time to fry. Cook the beef in two batches to avoid crowding; spread out the strips and fry for 5 to 6 minutes until they turn dark brown and crispy, stirring a few times. Use a slotted spoon to remove the first batch and drain on paper, then add 1 tbsp more oil for the second batch.
4-Cook the aromatics: Once the beef is done, lower the heat to medium and add the remaining Β½ tbsp oil. Toss in 1 medium sliced onion and cook for 2 minutes until it softens. Stir in 1 red chilli (sliced), 1 tsp minced ginger, and 3 garlic cloves, cooking for just 30 seconds to release those fresh aromas.
5-Make the sauce and finish: Now, pour in 2 tbsp rice vinegar, 3 tbsp dark soy sauce, 2 tbsp tomato puree, 6 tbsp caster sugar, 2 tbsp tomato ketchup, and 2 tbsp sweet chilli sauce. Crank up the heat so the sauce bubbles and reduces for a couple of minutes. Finally, toss the beef back in, stir to coat, and heat through for 1-2 minutes before serving with rice or noodles.
