Instructions

1-Start by boiling the potatoes: Place 700g to 1.2kg of small to medium potatoes in salted water with 1 tablespoon of salt. Cook until soft, about 20-25 minutes for small ones or 30 minutes for medium.

2-Drain and steam dry: Once done, drain the potatoes and let them steam dry in a colander for 5 minutes to remove excess moisture.

3-Preheat the oven: Set it to 200Β°C (390Β°F) or 180Β°C fan, getting it nice and hot for baking.

4-Smash the potatoes: Lay them on a baking tray and gently press each one with a fork or masher, keeping them mostly in one piece for that perfect shape.

5-Let them dry again: Leave the smashed potatoes on the tray for another 5 minutes to steam dry.

6-Add flavors: Drizzle 30g of melted unsalted butter and 1 tablespoon of olive oil over the top, then sprinkle with 3/4 teaspoon salt and 1/4 teaspoon black pepper.

7-Bake until golden: Pop them in the oven without flipping, baking for 45 minutes for small potatoes or 55 minutes for medium, until they’re deep golden and crispy.

8-Serve hot: Take them out and garnish with finely chopped parsley if you like, then enjoy right away for the best texture.
