Ingredients
– 1/2 cup cream cheese
– 1/2 cup shredded Double Gloucester or sharp cheddar
– 2 tablespoons heavy cream
– 1/4 teaspoon coarse salt
– 1 cup mayonnaise
– 1 1/2 teaspoons minced garlic
– 1/2 teaspoon coarse salt
– 8 slices artisan bread
– 8 medium cheddar cheese slices
– 8 provolone slices
Instructions
1-First Step: Make the cream cheese spread Add the 1/2 cup cream cheese, 1/2 cup shredded Double Gloucester or sharp cheddar, 2 tablespoons heavy cream, and 1/4 teaspoon coarse salt to a food processor. Blend until the mixture is smooth and easy to spread. If you do not have a food processor, mix very well by hand, but take your time so the texture stays as creamy as possible.
2-Second Step: Mix the garlic spread In a small bowl, stir together the 1 cup mayonnaise, 1 1/2 teaspoons minced garlic, and 1/2 teaspoon coarse salt. Stir until the garlic is evenly mixed through the mayo. This spread is what gives the outside of the bread that golden, savory crust.
3-Third Step: Build the cheese layers Lay out the 8 slices artisan bread on your counter. On 4 bread slices, place 2 medium cheddar cheese slices on each piece. On the other 4 slices, place 2 provolone slices on each piece. If your cheese slices are larger than the bread, use one slice of each cheese per sandwich and tear them into two pieces so they fit neatly.
4-Fourth Step: Add the cream cheese spread Divide the cream cheese spread evenly over the provolone-topped bread slices. Try to spread it close to the edges so every bite gets some of that creamy filling. Then place the cheddar-topped bread on top to form 4 full sandwiches.
5-Fifth Step: Heat the skillet Set a skillet over medium heat and let it warm up before adding the sandwiches. A non-stick pan or griddle works best because a regular pan may cause a little sticking. This small switch can save you from tearing the bread when you flip it.
6-Sixth Step: Add the garlic spread to the outside Spread the garlic mayo mixture on the outer sides of each sandwich. Be generous, but keep the layer even. The mayo mixture helps the bread brown and gives the finished sandwich its tasty, diner-style crust.
7-Seventh Step: Cook until golden Place the sandwiches in the heated skillet and cook for about 2 minutes per side. Keep the heat at medium so the bread can turn golden brown without burning before the cheese melts. Flip carefully and press lightly with a spatula if needed. You want the outside crisp and the inside soft and gooey.
8-Eighth Step: Serve right away Once the cheese is melted and the bread is golden, move the sandwiches to a plate and serve immediately. This is the kind of sandwich that tastes best hot, when the cheese is fully melted and the garlic spread is still fragrant.
