Ingredients

– 5 lb. russet potatoes peeled and boiled until fork tender

– 8 whole egg yolks

– 1 stick butter softened

– 2 tsp. salt adjust to taste

– Black pepper plenty

– 1/4 tsp. nutmeg plus more to taste

– 1 1/4 cups heavy cream

– 1 whole egg

Instructions

1-Preheat your oven to 375 degrees, as thatโ€™s the key temperature for getting that golden finish. Lay the boiled potatoes on a baking sheet and bake for 10-15 minutes until theyโ€™re slightly dried on the surface this step helps achieve a better texture by removing extra moisture.

2-Once cooled for about 5 minutes, process the potatoes through a ricer or food mill to get them super smooth. Then, mix in the egg yolks, softened butter, salt, pepper, nutmeg, and 3/4 cup heavy cream, stirring everything together until itโ€™s well combined and seasoned just right. Transfer this mixture to a large pastry bag with a star tip, and pipe it into fun circular, upward spirals on your baking sheet. Donโ€™t forget to mix the whole egg with 1/2 cup heavy cream for an egg wash, and brush it lightly over the piped potatoes chilling them for 30 minutes first makes this step easier if youโ€™re feeling precise.
