Ingredients
– 1/4 cup butter
– 2 garlic cloves
– 1/2 teaspoon dried oregano
– 4 slices bread (sourdough recommended but any bread can be used)
– 3 cups grated cheese (a blend of mature or sharp cheddar, mozzarella, and Gruyere is suggested; alternatives include Swiss, Provolone, Monterey Jack, American cheese, or Brie)
Instructions
1-Melt 1/4 cup butter in a pan, then add 2 crushed garlic cloves and 1/2 teaspoon dried oregano. Set the garlic herb butter aside.
2-Grate and combine 3 cups of cheese. Slice the bread into thick slices.
3-Place the cheese mixture on half of the bread slices, then cover with the remaining slices to form sandwiches.
4-Brush the outside of the sandwiches generously with the prepared garlic butter.
5-Heat a pan, skillet, or griddle over medium heat. Cook the sandwiches butter side down, covering the pan with a lid to help the cheese melt, for 3-4 minutes.
6-Brush the other side with garlic butter, flip gently, and cook for another 3-4 minutes until both sides are golden brown and the cheese is melted inside.
7-Remove from heat, allow to rest for 1 minute, then slice and serve.
