1 teaspoon kosher salt
2 sirloin steaks, about 2 pounds total, about 1.5 inches thick

Instructions
1-Starting with Garlic Butter: First, combine the softened butter with the minced garlic, chopped parsley, lemon zest, and kosher salt in a medium bowl. Stir until everything mixes fully using a spatula. Shape it into a log or put it in a container, then chill it in the fridge for 2 to 3 weeks or keep it at room temperature if youβll use it soon.
2-Cooking the Steaks: Next, take the steaks out of the fridge 30 to 45 minutes before you cook to let them reach room temperature. Heat a cast iron skillet over high heat until itβs really hot. Season the steaks with the kosher salt and black pepper on all sides, then place them in the skillet without crowding or adding butter yet. Sear for 4 minutes, flip, and sear for another 2 minutes; if they have fat caps, sear the sides too.
3-Cooking the Steaks: Reduce the heat to medium and add 2 tablespoons of the softened garlic butter per steak. Use a spoon to baste the steaks with the melted butter for 2 to 3 minutes, or until they hit the right internal temperature. Once done, take the steaks out, cover with foil, and let them rest for 10 to 15 minutes before serving each with 1 tablespoon of garlic butter on top, along with your favorite sides.
