– 1 1/2 cups all-purpose flour (190 grams)

– 1 1/4 teaspoons baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon fine sea salt

– 1/2 cup vegetable oil

– 2 large eggs (room temperature)

– 3/4 cups granulated sugar (150 grams)

– 1 teaspoon vanilla extract

– 1/2 cup buttermilk

– 453 grams seedless dark purple grapes

– 3 tablespoons granulated sugar (or maple syrup or sweetener of choice)

– 1 tablespoon lemon juice

– 1 1/4 cups walnuts

– 2 1/4 cups powdered sugar (283 grams)

– 113 grams cream cheese, softened (4 oz)

– 85 grams unsalted butter, softened (6 tablespoons)

– 1 teaspoon vanilla extract

Instructions

1-First, preheat your oven to 350Β°F (175Β°C) and line your cupcake pans.

2-In one bowl, sift together the flour, baking powder, baking soda, and salt.

3-Then, in another, whisk the eggs until frothy, add the oil, sugar, and vanilla, mixing until combined.

4-Alternate adding the dry ingredients and buttermilk to keep the batter smooth without overmixing.

5-Once your batter is ready, pour it into the pans and bake for 10-12 minutes.

6-While that’s happening, prepare the grape jam by combining grapes, sugar, and lemon juice in a saucepan, boiling then simmering until thickened.

7-Puree it for a smooth fill, and don’t forget to cool it completely.

8-After baking, remove the centers of the cupcakes and fill them with the cooled jam.

9-Top with the walnut buttercream you make by processing walnuts and creaming them with cream cheese, butter, powdered sugar, and vanilla.

10-For added flair, decorate with fresh grapes it’s like turning your kitchen into a bakery.

Notes

πŸ‡ Grape jam thickness depends on grape type; seedless grapes can be cooked whole for convenience.
πŸ”„ Processing the jam creates a smooth texture preferred for fillings.
🧁 Avoid overmixing cupcake batter to keep them moist and light; cool jam completely before filling to prevent melting frosting.
