3 medium red potatoes, unpeeled, sliced
3 medium carrots, peeled and sliced
3 stalks celery, sliced
2 cups green beans
1 medium onion, chopped
1 lb (approximately 450 grams) ground round beef, divided
1 teaspoon thyme, divided
1 teaspoon black pepper, divided
Salt and garlic powder to taste
4 medium tomatoes, chopped
1 to 1 1/2 cups shredded cheese
Instructions
1-First, in a 3-quart casserole dish (about 9 x 13 inches), layer half of the potatoes, carrots, celery, green beans, and onion.
2-Next, crumble half of the uncooked ground beef over the vegetables.
3-Then, sprinkle with half a teaspoon each of thyme and black pepper, plus salt and garlic powder to taste.
4-Repeat the layering process with the remaining vegetables and beef.
5-Top with the chopped tomatoes, cover, and bake at 400ยฐF (204ยฐC) for 15 minutes.
6-Reduce heat to 350ยฐF (177ยฐC) and bake for about 1 hour longer, until the vegetables are tender and the meat is fully cooked.
7-Finally, remove the cover, sprinkle with shredded cheese, cover again, and let stand until the cheese melts. The total cooking time is approximately 1 hour and 40 minutes.
