Ingredients

– 7 oz (200g) block of cheese (such as cheddar, colby, or similar variety), cut into 3mm thick slices of varying widths

– 2 tablespoons fresh rosemary, finely chopped

– 2 tablespoons fresh parsley leaves, finely chopped

– 1 teaspoon dried oregano

– 1/2 teaspoon dried thyme

– 2 garlic cloves, crushed or finely grated

– 3 tablespoons extra virgin olive oil

– 1/2 teaspoon cooking salt or kosher salt (adjust if using fine table salt)

– 2 1/4 cups plain (all-purpose) flour

– 1 teaspoon baking soda (or substitute with 3 1/2 teaspoons baking powder)

– 1/2 cup plain yogurt (full fat, unsweetened, such as Greek or regular)

– 3/4 cup milk (preferably full fat, though low fat is usable)

– 2 large eggs (about 50-55g each)

– 2 tablespoons olive oil

– 2 small garlic cloves, crushed or grated

Instructions

1-Preheat the oven: First, preheat the oven to 180Β°C/350Β°F, which works for both fan and standard ovens to ensure even baking. Lightly grease a 21 x 11 x 7 cm loaf pan and line it with baking paper for easy removal. In a bowl, mix the ingredients for the herb and garlic swirl until they’re easy to dollop, adding extra oil if needed for that perfect consistency.

2-Mix dry ingredients: Next, in a separate bowl, whisk together the dry ingredients like flour, baking soda, and salt.

3-Combine wet ingredients: In another bowl, combine the wet ingredients: yogurt, milk, eggs, melted butter, olive oil, and garlic. This keeps everything smooth and ready to blend.

4-Make the batter and layer: Create a well in the dry ingredients and pour in the wet mixture, stirring until just combined the batter might be a bit lumpy, and that’s okay. Pour one-third of the batter into your prepared pan, add one-third of the herb mixture, swirl it with a knife, and layer on one-third of the cheese slices, pressing some in and leaving others to peek out.

5-Repeat layering and bake: Repeat the layering twice more with the remaining batter, herb mix, and cheese for that beautiful swirl effect. Bake uncovered for 30 minutes until the top turns golden, then loosely cover with foil and bake another 20 minutes, or until a skewer comes out clean. Let it cool in the pan for 5 minutes, then move to a wire rack for at least 10 minutes before slicing.
