– 3 crushed chocolate sandwich cookies for topping
Instructions
1-In a stand mixer or using a hand mixer, combine heavy whipping cream, powdered sugar, and vanilla extract. Beat until whipped and creamy, without overwhipping.
2-In an 8-inch square pan, layer 16 chocolate sandwich cookies in one layer. Spread half of the whipped cream over the cookies and smooth with a spatula.
3-Add another layer of 16 chocolate sandwich cookies and top with the remaining whipped cream.
4-Sprinkle the crushed chocolate sandwich cookies on top. Cover the pan with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
5-For clean slices, place the cake in the freezer for 30 minutes before serving. Slice and enjoy.
