Instructions
1-Preheat the oven to 350 degrees Fahrenheit. Line an 8-inch square pan with parchment paper or lightly butter it if using foil. In a food processor, combine 1 cup all-purpose flour, 1/4 cup confectioners’ sugar, and 1/4 teaspoon kosher salt; pulse a few times. Add 1/2 cup cold unsalted butter and process until well combined. Stir in 1/4 cup roughly chopped shelled unsalted pistachios. Press the mixture firmly into the bottom of the pan using a flat-bottomed object. Bake until lightly browned, about 20 minutes.
2-While the crust bakes, whisk together 2 eggs, 1 cup sugar, 1/2 teaspoon baking powder, 2 tablespoons all-purpose flour, 1 teaspoon grated lemon zest, and 4 tablespoons fresh lemon juice. Pour the filling over the baked crust and bake until set, about 20 minutes. Allow the bars to cool completely. Sprinkle with confectioners’ sugar and cut into 2-inch squares.
