Ingredients

– 12 oz raspberries

– 1/3 cup granulated white sugar

– 1/2 tsp cornstarch

– 1 1/4 cups whole milk, warmed to about 110 degrees F

– 2 1/4 tsp active dry yeast

– 1 tsp granulated white sugar for blooming the yeast

– 4 3/4 cups all-purpose flour, spooned and leveled

– 1 1/2 tsp salt

– 2 tbsp granulated white sugar

– 2 eggs, whisked

– 1/2 tbsp vanilla extract

– 2 tbsp lemon zest (from about 2 lemons)

– 1/2 cup unsalted butter, very softened

– 1/2 cup unsalted butter, very softened

– 1/2 cup packed brown sugar

– 1/2 cup granulated white sugar

– 2 tbsp lemon zest (from about 2 lemons)

– 1 tbsp fresh lemon juice

– 1/4 tsp salt

– 1/4 cup raspberry jam (from the prepared jam)

– 1/4 cup heavy cream, at room temperature (poured between rolls before baking)

– 6 tbsp unsalted butter, very softened

– 6 oz cream cheese, cold

– 1 cup powdered sugar, sifted

– 1/2 tbsp lemon zest (from about half a lemon)

– 2 tbsp raspberry jam (from the prepared jam)

Instructions

1-Begin by making the raspberry jam: Cook 12 oz raspberries until they break down into liquid, then press through a sieve to remove seeds. Return the liquid to the pot, whisk in 1/3 cup granulated white sugar and 1/2 tsp cornstarch, and cook until thickened. Set aside portions for the filling and frosting.

2-Next, bloom the yeast: Mix 1 1/4 cups warm milk, 2 1/4 tsp active dry yeast, and 1 tsp granulated white sugar in a bowl, letting it sit for 10 minutes until foamy.

3-Make the dough: In a large bowl, combine 4 3/4 cups all-purpose flour, 1 1/2 tsp salt, and 2 tbsp granulated white sugar. Add 2 whisked eggs, 1/2 tbsp vanilla extract, 2 tbsp lemon zest, 1/2 cup very softened unsalted butter, and the yeast mixture. Knead with a stand mixer for 7-10 minutes until smooth, then form into a ball, place in a greased bowl, cover, and let rise for 1 to 1 1/2 hours until doubled.

4-Prepare the filling: Beat together 1/2 cup very softened unsalted butter, 1/2 cup packed brown sugar, 1/2 cup granulated white sugar, 2 tbsp lemon zest, 1 tbsp fresh lemon juice, 1/4 tsp salt, and 1/4 cup raspberry jam until well combined.

5-Shape the rolls: Punch down the risen dough and roll it out on a floured surface into an 18 x 12 inch rectangle that’s 1/4 inch thick. Spread the filling evenly over it, then roll tightly into a log, trim the ends, and cut into 12 rolls about 1 1/2 inches wide using unflavored dental floss or a sharp knife.

6-Second proof: Place the rolls in a greased 9×13 inch dish and pour 1/4 cup room temperature heavy cream between each roll. Cover with lightly greased plastic wrap and let rise in a warm area for about 1 hour until doubled.

7-Bake the rolls: Preheat the oven to 350 degrees F and bake for 22-25 minutes until golden brown.

8-Make the frosting: Beat 6 tbsp very softened unsalted butter until pale, add 6 oz cold cream cheese and beat until smooth, then gradually beat in 1 cup sifted powdered sugar. Finally, beat in 1/2 tbsp lemon zest and 2 tbsp raspberry jam until fluffy.
