๐Ÿฅฉ Create a juicy, flavorful meatloaf that brings back memories of family dinners and cozy evenings at home
๐Ÿ  Master this timeless comfort food recipe that’s perfect for weeknight meals and Sunday dinner gatherings

  • Total Time: 1 hour 20 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

2 pounds ground beef (80-85% lean)

1 medium finely chopped onion (about 1 cup)

1 teaspoon oil

3 minced garlic cloves

2 large eggs

2 tablespoons ketchup

3 tablespoons finely chopped fresh parsley

3/4 cup Panko or gluten-free breadcrumbs

1/3 cup milk

1 teaspoon Italian seasoning (or to taste)

1 teaspoon salt

1/2 teaspoon ground black pepper

3/4 cup ketchup

1 1/2 teaspoons white vinegar

2 tablespoons brown sugar

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Instructions

1-First, preheat your oven to 350ยฐF (175ยฐC) and line a rimmed baking sheet with parchment paper or foil to prevent sticking and make cleanup easier.

2-Next, in a pan, sautรฉ the onion in 1 teaspoon oil over medium heat for 5-7 minutes until softened and golden, then let it cool. This step enhances the flavor and prevents a raw onion taste in your meatloaf.

3-In a large bowl, mix all meatloaf ingredients gently by hand until just combined to avoid overmixing, which keeps the meatloaf tender. Shape the mixture into an 8-inch long, 4-inch wide, and 3-inch tall loaf on the baking sheet.

4-Bake uncovered for 40 minutes, then prepare the sauce by combining 3/4 cup ketchup, 1 1/2 teaspoons white vinegar, 2 tablespoons brown sugar, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder in a bowl.

5-Spread the sauce evenly over the meatloaf and bake for an additional 20 minutes, or until the internal temperature reaches 160ยฐF (71ยฐC). Let the meatloaf rest for 10-15 minutes before slicing to redistribute juices, resulting in about 338 calories, 17 grams of carbohydrates, 24 grams of protein, and 19 grams of fat per serving.

Notes

๐ŸŒก๏ธ Use a meat thermometer to ensure perfect doneness – 160ยฐF guarantees safe and juicy meatloaf every time
๐Ÿฅ› Don’t skip the milk and breadcrumbs – they keep the meatloaf moist and prevent it from becoming dense
๐Ÿ”ช Let the meatloaf rest before slicing to allow juices to redistribute, keeping each slice tender and flavorful
