3 tablespoons olive oil, divided

1 medium onion, diced

1 tablespoon garlic, minced

1 cup baby spinach, chopped

1 pound ground chicken

½ cup breadcrumbs (regular or for a crunchier texture)

¼ cup yogurt (plain variety)

2 tablespoons fresh dill, finely chopped

1 tablespoon fresh lemon juice (from half lemon)

1 teaspoon dried oregano (can substitute with general herb seasoning)

½ teaspoon paprika

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon ground black pepper

Instructions

1-Start by heating 2 tablespoons olive oil in a skillet over medium-high heat until it’s hot. Then, sauté the onion and garlic until they’re tender and browned, which takes about 2-3 minutes. This builds a strong flavor base for your patties.

2-Next, add the spinach and sauté for 1 minute until it’s soft, then set it aside to cool for 5 minutes. In a large bowl, combine the ground chicken, the sautéed mixture, breadcrumbs, yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix everything thoroughly using a spatula or your hands.

3-Shape the mixture into a firm ball, cover it with plastic wrap, and refrigerate for at least 30 minutes or overnight. This helps the flavors meld and makes the patties easier to form. Divide the mixture into ½ cup portions and shape about 12 patties.

4-Heat the remaining 1 tablespoon olive oil in a skillet over medium-high heat until hot, then cook the patties in batches, about 6 at a time, for 3-5 minutes per side until they’re seared and reach an internal temperature of 165°F. If you prefer, cook 4 patties per batch in an air fryer at 375°F for 13-15 minutes, flipping halfway until golden and fully cooked. Serve them warm with sides like rice, vegetables, flatbread, or salad.
