Ingredients

– 8 ounces diced yellow potatoes

– 1 medium chopped yellow onion

– 1 chopped jalapeno pepper

– 1 optional serrano pepper for extra heat

– 2 cloves chopped garlic

– 1 pound ground beef

– 2 large chopped tomatoes

– 3/4 cup beef stock

– 1 tablespoon paprika

– 1 tablespoon Mexican oregano

– 1 teaspoon cumin

– Salt and pepper to taste

– 1 tablespoon olive oil for cooking

Instructions

1-First, prepare all ingredients by chopping the yellow onion, dicing the potatoes, and mincing the garlic for quick cooking.

2-Second, in a large pan, heat 1 tablespoon of olive oil over medium heat and add the potatoes, onion, and peppers. Cook for about 5 minutes until they soften and release their flavors.

3-Third, add the chopped garlic and ground beef to the pan. Break up the meat with a spoon and cook for 5 minutes until it’s browned but not fully done.

4-Fourth, stir in the chopped tomatoes, beef stock, and seasonings like paprika, Mexican oregano, cumin, salt, and pepper. Mix well to combine.

5-Fifth, bring the mixture to a boil, then reduce the heat to simmer. Let it cook for 20 minutes, stirring now and then, until the potatoes are tender and the beef is fully cooked.

6-Sixth, taste and adjust the seasoning as needed for the perfect balance.

7-Finally, serve it hot over rice or with warm tortillas, and add garnishes like sliced peppers, chili flakes, fresh lime juice, or hot sauce to brighten it up.
