1 recipe of your favorite pie crust, chilled for at least 1 hour

Filling of choice such as apple pie filling, peach, cherry, pumpkin, chocolate, Nutella, fresh berries, finely chopped chocolate or chocolate chips, pecans or candied nuts, cinnamon, nutmeg, lemon curd, mascarpone cheese, marmalade, or mincemeat about a scant teaspoon per pie

1 egg white plus 1 tablespoon water, fork beaten

Granulated sugar or turbinado sugar for sprinkling

Instructions

1-First, prepare all ingredients by rolling out the chilled dough on parchment paper or a floured surface to a thickness of 1/8-inch to 1/4-inch. Then, cut out rounds or squares about 3 to 4 inches wide using a cookie cutter. Next, place about a scant teaspoon of filling on half of each dough shape.

2-Now, moisten the edges with water, fold the dough over the filling, and press to seal; vent with a fork or knife. Refrigerate the hand pies for at least 15 minutes or freeze them on a parchment-lined baking sheet overnight and then store in resealable bags. Preheat the oven to 400ยฐF, brush the pies with the egg white mixture, sprinkle with granulated sugar or turbinado sugar, and bake for 10 to 17 minutes until golden.

3-Begin with fine chopping if needed, then sautรฉ in a pan for the filling base. Combine your dough elements next, chilling as directed. Assemble and bake for that golden finish, cooling slightly before you serve.
