Ingredients
– 12 ounces spaghetti (such as whole wheat)
– 2 tablespoons olive oil
– 1 pound cremini mushrooms, sliced
– 4 to 6 garlic cloves, chopped
– Kosher salt and ground pepper, to taste
– 1/2 cup grated Pecorino Romano cheese, plus more for serving
– 2 to 3 tablespoons coarsely chopped fresh parsley leaves
Instructions
1-First, cook spaghetti in salted water according to package directions until itβs just right. Reserve 2/3 cup of pasta water before draining to help create a creamy sauce later. While the pasta cooks, heat olive oil in a large skillet over medium heat and add sliced mushrooms.
2-Next, cook the mushrooms until theyβre tender and browned, which takes about 5 to 7 minutes. Then, add chopped garlic, seasoning with salt and pepper to bring out the flavors, and cook for another minute. Combine the drained pasta, grated cheese, and reserved pasta water in the skillet.
3-Now, toss everything well with tongs until the sauce forms and coats the pasta evenly. Stir in the chopped parsley for a fresh finish, and serve immediately for the best taste.
