Ingredients

– 9 ounces (250 grams) baby spinach, washed

– 1/4 teaspoon fine salt, plus more to taste

– 5 ounces (140 grams) cream cheese

– 1 ounce (30 grams) freshly grated parmesan cheese, plus more for serving

– 1/4 teaspoon ground nutmeg, or 1/3 of a freshly grated nutmeg, according to taste

– Black pepper, to taste

Instructions

1-Cook the pasta: Cook the pasta until al dente according to package directions, reserving at least half a cup of the pasta cooking water before draining.

2-Heat the oil: In a large skillet, heat 1 tablespoon of olive oil or extra virgin olive oil over medium heat.

3-Add the garlic: Add the garlic and cook for 1 to 2 minutes until fragrant, ensuring it does not burn.

4-Add the spinach: Add the spinach a handful at a time, seasoning with 1/4 teaspoon of fine salt and stirring until it wilts but remains bright green.

5-Stir in cream cheese and water: Stir in the cream cheese and about one-third cup of the reserved pasta water (save some extra water to adjust the sauce consistency if needed).

6-Add parmesan and nutmeg: Add the grated parmesan cheese and nutmeg, stirring well to form the sauce.

7-Toss and serve: Toss the drained pasta with the sauce in the skillet, and serve immediately with a drizzle of extra olive oil, black pepper, and freshly grated parmesan cheese.
