2 pounds boneless, skinless chicken thighs

1 pound husked and rinsed tomatillos

1 large white onion roughly chopped

3 jalapeño peppers halved and seeds removed for milder flavor

2 cloves garlic

1 tablespoon Mexican oregano

1 teaspoon kosher salt

6 cups chicken or vegetable broth

1 cup cilantro including stems and leaves

2 (15-ounce) cans hominy drained and rinsed

Lime wedges

Sliced radishes

Thinly shredded cabbage

Diced white onions

Chopped cilantro

Additional Mexican oregano

Instructions

1-First, rinse and prep all your ingredients as listed. This includes husking the tomatillos and chopping the onion and jalapeños. Taking a moment here makes the cooking process smoother and helps flavors meld well.

2-Next, in a large pot, combine the chicken thighs, tomatillos, onion, jalapeños, garlic, Mexican oregano, salt, and broth. Bring this to a simmer and cook for about 40 minutes until the chicken is tender. As it simmers, the tomatillos break down, forming the foundation of that bright green broth.

3-Once the chicken is ready, remove and shred it. Then, blend the cooked vegetables and chiles with cilantro and some of the cooking liquid to make a smooth sauce. Return this sauce to the pot, add the shredded chicken and hominy, and simmer uncovered for another 15 minutes. This step lets all the elements come together for a cohesive, flavorful stew. Feel free to taste and adjust as you go, perhaps adding a bit more salt or herbs for your preference.
