Ingredients

– 170g white bread cut into 2cm cubes

– 2 tablespoons olive oil

– half a teaspoon mixed dried herbs

– one eighth teaspoon garlic powder

– 100g lighter mayonnaise

– 30g tomato ketchup

– quarter teaspoon paprika

– one lemon sliced into 8 wedges

– 250g cold water prawns (defrosted and drained)

– 2 heads of Little Gem lettuce separated into leaves

– 225g cooked king prawns (defrosted and drained)

– half a teaspoon cayenne pepper for serving

Instructions

1-Start by preheating your oven to 180ยฐC (fan 160ยฐC) or gas mark 4 to get ready for making croutons. Toss the 170g of white bread cubes with 2 tablespoons of olive oil, half a teaspoon of mixed dried herbs, and one eighth teaspoon of garlic powder, then season and spread on a baking sheet. Bake for 5-7 minutes, turning halfway, until they turn golden brown for that perfect crunch.

2-Next, in a bowl, mix 100g of lighter mayonnaise with 30g of tomato ketchup, quarter teaspoon of paprika, and the juice from two lemon wedges. Stir in the 250g of cold water prawns that are defrosted and drained, then tweak the seasoning to your liking for a creamy sauce.

3-Arrange the leaves from 2 heads of Little Gem lettuce on a platter to build the base. Spoon the prawn mixture over the top, add the 225g of cooked king prawns, sprinkle with half a teaspoon of cayenne pepper, and finish with the remaining lemon wedges.
