๐Ÿ“ Luxurious chocolate truffles with a tangy raspberry twist that melt in your mouth with every bite
๐Ÿซ Rich, velvety smooth filling encased in glossy chocolate – perfect for gifting or special occasions

  • Total Time: 3 hours 40 minutes
  • Yield: 24 truffles 1x

Ingredients

Scale

3/4 cup plus 2 tablespoons heavy cream (210g)

1 cup semi-sweet or dark chocolate, finely chopped (175g)

2 tablespoons unsalted butter, cubed (30g)

1 tablespoon light corn syrup (optional, 15ml)

1/2 teaspoon fine salt (3g)

1/3 cup freeze-dried raspberries (30g)

1 cup (8 oz) semi-sweet or dark chocolate chips (175g)

1 tablespoon vegetable shortening or coconut oil (12g)

2 tablespoons crushed freeze-dried raspberries (12g)

Instructions

1-First, heat the heavy cream in a saucepan over medium heat until it simmers, which helps create that signature smooth ganache for your Raspberry Truffles.

2-Once simmering, remove from heat and add the finely chopped semi-sweet or dark chocolate, stirring gently until it melts completely into the cream.

3-Next, mix in the cubed unsalted butter, light corn syrup if using, fine salt, and freeze-dried raspberries, ensuring everything combines for a rich, flavorful base.

4-Let the mixture cool slightly, then refrigerate it for about an hour until it firms up enough to shape, which is crucial for the texture of Raspberry Truffles.

5-While the mixture chills, prepare the coating by melting the semi-sweet or dark chocolate chips with vegetable shortening or coconut oil in a double boiler.

6-Scoop the chilled mixture into small balls, roll them smoothly, and dip each one into the melted coating for that perfect finish.

7-Finally, decorate with crushed freeze-dried raspberries and let them set on a tray in the fridge for extra firmness before serving your Raspberry Truffles.

Notes

๐Ÿ“ For the smoothest texture, use high-quality chocolate and chop it finely so it melts evenly
๐ŸŒก๏ธ Don’t overheat the cream – it should just be simmering when poured over the chocolate to prevent seizing
๐Ÿฅง Let the truffles come to room temperature for 10-15 minutes before serving for the best flavor and texture
