Ingredients

– 1 ยฝ cups water

– 1 cup granulated sugar

– 1 12 oz bag frozen raspberries

– ยฝ vanilla bean, split lengthwise

– Club soda (amount as needed)

– Half and half (optional, amount as desired for a splash)

– Additional raspberries for garnish (optional, quantity as desired)

Instructions

1-Follow these directions closely for the best results: In a medium saucepan, combine 1 ยฝ cups water, 1 cup granulated sugar, 1 12 oz bag frozen raspberries, and ยฝ vanilla bean (split lengthwise). Bring the mixture to a boil, then reduce the heat and simmer for 25 minutes, stirring occasionally, until the syrup darkens and thickens slightly.

2-Strain the mixture through a fine mesh sieve, pressing lightly on the solids, then discard the solids. Refrigerate the syrup until it is chilled. To assemble, pour the desired amount of syrup into a glass, then top with club soda in a ratio of approximately 1 part syrup to 3 parts soda. Optionally, add a splash of half and half, and serve immediately.
