πŸ” Quick weeknight dinner that combines juicy beef patties with tender roasted cabbage for a healthy twist

  • Total Time: 37 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 head of green cabbage, sliced into 1-inch pieces

1 pound of lean ground beef

1 teaspoon grated garlic

1/2 cup chopped green onion

1/2 cup chopped parsley

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red chili pepper flakes

1/4 cup shredded cheese (mozzarella or Monterey Jack)

Oil for brushing the cabbage slices

Tomato sauce or ketchup (1 tablespoon per slice for assembly)

Additional shredded cheese for topping the burgers

Fresh herbs for garnishing

Instructions

1-First, start by preheating your oven to 400ΒΊF (200ΒΊC) to get everything ready for roasting. Slice the 1 head of green cabbage into 1-inch pieces and arrange them on a rimmed sheet pan. Brush the cabbage with oil and season it with salt and pepper, then roast for about 10 minutes until it softens just a bit.

2-While the cabbage roasts, mix 1 pound of lean ground beef with 1 teaspoon grated garlic, 1/2 cup chopped green onion, 1/2 cup chopped parsley, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon red chili pepper flakes, and 1/4 cup shredded cheese. Form this mixture into four patties that hold together well.

3-Once the cabbage is done precooking, spread 1 tablespoon of tomato sauce or ketchup on each slice and sprinkle on some extra shredded cheese. Place a beef patty on top of each one, add another layer of shredded cheese, and bake for 10-12 minutes until the burgers cook through and the cheese melts nicely. Finish by garnishing with fresh herbs for a pop of color and flavor the whole process takes about 37 minutes, with 12 minutes prep and 25 minutes cooking.
