2 kg whole prawns, pre-cooked, shell on (Tiger, King or Banana prawns)

24 oysters (Sydney Rock or Pacific preferred)

4 blue swimmer crabs (400g or larger), pre-cooked in shell, whole

8 Moreton Bay bugs, pre-cooked in shell, whole (Balmain bugs as substitute)

200g smoked salmon

250g sashimi, pre-sliced (tuna, kingfish, or salmon)

1 kg mussels, cooked and served at room temperature

Cocktail seafood sauce

Tartare sauce

Marie Rose or Thousand Island sauce

Thai chili lime sauce

Family favourite seafood sauce

A variety of sauces for oysters

Soy sauce and wasabi for sashimi

Ice (optional, crushed preferred)

Ample lemon wedges

Parsley sprigs for decoration (optional)

Good bread with butter or extra virgin olive oil

Green salad or vegetable sticks (crudites)

Crispy salt and pepper squid

Cheese and crackers

Frozen potato gems (tater tots)

Additional seafood or fish dishes as desired

Instructions

1-Gather and prepare all ingredients: Clean and pat dry the seafood as needed.

2-Prepare sauces: Mix your chosen two sauces and refrigerate them.

3-Cook mussels if not pre-cooked: Steam them briefly and let cool.

4-Assemble the platter: Fan out the sashimi, drape the smoked salmon, and arrange oysters and mussels in a single layer to keep juices intact.

5-Add extras: Place sauce bowls, lemon wedges, finger bowls, and shell discard bowls around the edges.

6-Serve: Pair with bread, salad, and your favorite drinks for a complete setup.
