1 to 2 cups melting cheese such as mozzarella, cheddar, Mexican blend, or Monterey Jack

6 to 8 medium flour tortillas

Instructions

1-First, heat the olive oil in a large skillet over medium heat. SautΓ© the onion, bell pepper, and garlic for about a minute until they soften and smell great. Then, add the shrimp and seasoning, cooking for 1 to 2 minutes until the shrimp begins to turn pink but stays tender.

2-Remove the shrimp mixture from the pan and give it a quick clean before adding cooking spray or 1 teaspoon of vegetable oil. Place a tortilla in the pan, sprinkle cheese on one side, add 5 to 6 shrimp or enough to cover, then layer more cheese on top and fold the tortilla in half.

3-Cook each folded quesadilla for 2 to 3 minutes per side until it’s golden and crispy. Remember, shrimp cooks fast, so keep an eye on it to avoid tough textures. Repeat the process with the remaining tortillas for a full batch.

4-Once done, serve your shrimp quesadillas warm with sides like sour cream, salsa, or guacamole for extra zing. The whole process takes about 5 minutes to prep and 10 minutes to cook, giving you a total of 15 minutes. This yields around 8 quesadillas, perfect for sharing.
