Instructions
1-First: combine the flour, salt, yeast, water, and 1 tablespoon of olive oil in a bowl to form a dough ball, then let it rest for 5 minutes.
2-Next, stretch and fold the dough four times, with 5-minute breaks in between, before coating it with the remaining olive oil, covering it, and refrigerating for at least 12 hours. This step develops the dough’s texture, making it just right for a crispy crust.
3-Three hours before serving, oil a 10-inch cast-iron skillet and press the dough into it, letting it rest and rise for 2 hours.
4-Preheat your oven to 450ยฐF (232ยฐC) with racks at the top and bottom.
5-Evenly spread 1 cup of mozzarella on the dough, then add the sauce mixed with chili paste and pizza seasoning, followed by the rest of the mozzarella.
6-Bake on the bottom rack for 18 minutes to get that perfect base.
7-Add pepperoni and Parmesan, then shift to the top rack for 3 to 5 more minutes.
8-Remove from the pan, let it cool slightly, and slice for serving.
