Instructions

1-Start by setting up your ingredients, which takes about 15 minutes of prep time. Heat the olive oil in a large pot over medium heat and add the chopped onion along with salt and pepper, sautéing until soft for 5 to 8 minutes. Next, add the sweet potatoes and apple, stirring occasionally until they soften, about 8 to 10 minutes this builds the base of your sweet potato soup.

2-First Steps: Building the Base Stir in the garlic, ginger, coriander, and smoked paprika, cooking until fragrant. Add the apple cider vinegar, then pour in 3 cups of vegetable broth and the coconut milk, reserving ¼ cup for garnish. This step ensures the flavors meld beautifully in your sweet potato soup.
