🍽️ This dish is perfect for those wanting a wholesome, nutrient-rich dinner with a blend of protein, greens, and fruit in every bite.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

4 apples, halved from stem to bottom, cored and hollowed

1 tablespoon extra virgin olive oil

1 pound ground turkey

1/2 yellow onion, chopped

2 cloves garlic, minced

2 cups chopped Tuscan kale

Salt and pepper to taste

2 tablespoons chopped fresh sage

1/2 cup raisins

1 cup natural rice vinegar

Instructions

1-Preheat and Prep: First, preheat your oven to 350Β°F (175Β°C). This sets the stage for even baking. Halve the 4 apples from stem to bottom, core and hollow them out carefully to hold the filling. It’s a quick step that takes just a few minutes.

2-Cook the Filling: Heat 1 tablespoon extra virgin olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and cook until browned, breaking it up with a spatula for about 5 minutes. Then, toss in 1/2 yellow onion, chopped, and 2 cloves garlic, minced; cook for another 2 minutes until the onions soften and everything smells amazing. 3-Cook the Filling: Next, add 2 cups chopped Tuscan kale and season with salt and pepper to taste; stir until the kale wilts, which takes about 3 minutes. Mix in 2 tablespoons chopped fresh sage and 1/2 cup raisins, cooking for 2 more minutes before removing from heat. This creates a savory filling that’s packed with flavor.

4-Assemble and Bake: Pour 1 cup natural rice vinegar into the bottom of a 9Γ—13 inch baking dish. Stuff each apple half with the turkey mixture and place them in the dish. Bake for 30 to 35 minutes until the stuffing browns and the apples soften. The vinegar adds a nice tang that ties everything together.

Notes

🍎 Use firm but ripe apples to ensure they soften without collapsing during baking.
🌿 Fresh sage adds vibrant herb flavor; dried sage can be substituted but use less.
πŸ‡ Raisins bring natural sweetness and texture contrast; substitute with dried cranberries if preferred.
