– 1 nine-inch unbaked pie crust

Instructions
First, preheat the oven to 375 degrees. Separate one egg white from an egg yolk in a small bowl, keeping both parts. Brush the crust with the beaten egg white and pre-bake it for 7 to 8 minutes, then let it cool for 10 minutes.
1- In a large bowl, whisk together three eggs plus the spare yolk and the remaining beaten egg white.
2- Add 3/4 cup sugar, 1/4 teaspoon salt, 1 teaspoon vanilla, 1 cup heavy cream, and 1 1/2 cups milk to the bowl, whisking until smooth.
3- Pour the egg mixture carefully into the pre-baked pie crust and sprinkle with 1/4 teaspoon nutmeg.
4- Bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean.
5- Once done, cool the pie on a wire rack and store it in the refrigerator.
